To obtain vitamin B-12, one way is to consume animal foods (vegan diets supply only little vitamin B-12). As the client has only started a vegan diet for a short period of time, she probably can still accept meat. But the amount of meat in her diets should increase gradually. To eat more healthily, we can use the method of steaming and avoid the skin or fat portion of the meat. If she really doesn’t want to consume meat at the beginning, we can try seafood first. We can also suggest vitamin B-12 supplement and fortified breakfast cereal if she really refuses to eat meat.
Since the client will have a marathon race 2 weeks later, which is a continuous, intense aerobic event lasting more than 60 minutes, we can give her a carbohydrate-loading regimen which can help to maximize the amount of energy stored in the form of muscle glycogen for the event. During the week prior to the event, she should gradually reduce the intensity and duration of training while simultaneously increasing the percentage of total calories supplied by carbohydrate.
